
2 lb Chicken breast
4 bell peppers, sliced
1 onion, sliced
8oz cream cheese
1/2 C salsa
1 1/2 tsp garlic salt
1 tsp cumin
1 tsp chili powder
1 tsp paprika
Preheat the oven to 400. Place chicken breast in a greased 9x13 pan. Mix the cream cheese, salsa, garlic, cumin, chili powder and paprika together in a bowl. Pour cream cheese mixture over the chicken breast and top with sliced onions and peppers. Bake for 35-40 min. or until chicken is cooked through. Shred chicken (I used my stand mixer to do this) and then add the chicken back to the pan with the peppers/onions and cream sauce and stir to combine well. Enjoy in a fajita bowl (pictured here) or in a tortilla!
